National Hotel Cheesecake

Serves: 12Ingredients:
- 1 1/4 cup Graham Crack Crumbs
- 1/2 cup Brown Sugar
- 3 oz Butter (Melted)
- 1 teaspoon Cinnamon
- 1 lb Cream Cheese
- 1 cup Sugar
- 5 Eggs
- 1 teaspoon Almond Extract
- 24 oz Sour Cream
- 1 tablespoon Vanilla Extract
- 20 oz Sour Cream
- 1/2 cup Sugar
- 2 oz Half & Half
Steps:
- Mix all ingredients for crust: Graham Crack Crumbs, Brown Sugar, Butter (Melted), Cinnamon. Press firmly into bottom of cheesecake pan.
- Mix all ingredients for filling in a mixing bowl: Cream Cheese, 1 Cup Sugar, Eggs, Almond Extract, 24 oz Sour Cream, Vanilla Extract. Pour mixture into prepared crust and bake for approximately 1½ hours at 350º.
- Remove from oven and let cool for approximately ½ hour.
- Mix topping ingredients together and pour on top of cheesecake.
Bake for an additional 20 minutes.
- Place in refrigerator to cool. When cold, mark with cheesecake marker for correct portion, which is 12 per cake.
