Chicken Jerusalem (artichoke)
Total preparation time: 15 minutes
Serves: 4Ingredients:
- 2 each Chicken breasts
- 1 tablespoon Butter
- 1/3 cup Flour
- 1/2 teaspoon Chopped Garlic
- 1 cup Button Mushrooms
- 1/2 cups Quartered Artichokes
- 1/2 cup Sherry
- 1/4 cup Heavy Cream
Steps:
- Cut chicken breasts in half, trim and lighliy pound to even 1/2 inch thick pieces.
- Melt Butter
Dredge chicken in flour and sautee in butter until coooked
Add garlic, mushrooms and artichokes
Sautee together for 5 minutes, add sherry and heavy cream
Salt & Pepper to taste
- Reduce at high heat for 5 minutes or until reduced by half.
