Almond Tres Leche Muffins
Serves: 12Steps:
- 1/2 cup butter softened
2/3 cup sugar
1/2 tsp almond extract
2 eggs
2 cups AP flour
2 tsp baking powder
1/3 cup sweetened condensed milk, from 14 oz can
1/3 cup whipping cream
1/3 cup milk
3/4 cup sliced almonds
- Heat oven to 350, grease muffin cups or use paper baking cups
In large bowl, beat butter, sugar, with mixer
Beat in almond extract and eggs
Stir in flour baking powder, 1/3 cup condensed milk, whipping cream, milk, and 1/2 cup of almonds
Divide batter into muffin cups until their 3/4 full
Sprinkle remaining almonds evenly over batter
Bake 15-20 minutes or until golden brown
Let cool for 10 minutes
Drizzle 1 tsp additionail sweetened condensed milk over the top
