BANANA LEMON LOAF

- 1/2 cup butter
- 1/4 cup sugar
- 2 eggs, beaten
- 1-1/2 cups mashed bananas
- 6 tablespoons lemon juice
- 2 cups flour
- 1 teaspoon baking soda
- 2-3 tablespoons grated lemon peel
Steps:
- This recipe makes 2 lemon loafs.
- Preheat oven to 350. Grease and flour pans. Cream butter and sugar. Blend in eggs, bananas, and lemon juice.
- In separate bowl sift dry ingredients and stir into egg mixture. Add grated lemon peel and mix well. Pour into pans and bake about one hour or until clean knife inserted in center comes out clean.
