SPINACH QUICHE

Serves: 12Ingredients:
- 2 bunches fresh spinach, cleaned and cut up
- 4 tablespoons butter
- 4 tablespoons butter
- 10 eggs
- 3 cups cottage cheese
- 1 cup shredded jack cheese
- 1/4 cups of Progresso Italian bread crumbs
Steps:
- Melt the 4 tablespoons butter in a medium pan. Add cut up, washed spinach. Add salt, pepper, and garlic powder to taste. Cook spinach over medium heat until tender. Remove from heat and let cool.
- In large bowl, mix eggs, cottage cheese, jack cheese, and bread crumbs. Squeeze excess water from cooked spinach and add to egg mixture. Mix well and place in greased 13x9 glass dish. Bake at 350 for 30-45 minutes.
