PUFFED APPLE PANCAKES

Serves: 6Ingredients:
- 4 large eggs,
- l cup whole milk
- 2/3 cups flour
- 3 tablespoons sugar
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- 1/4 teaspoon cinnamon
- 4 tablespoons butter
- 12 ounces golden delicious apples (about 2) peeled and sliced thin
- 1/2 cup golden brown sugar
Steps:

- Preheat oven to 425. Whisk eggs, milk, sugar, vanilla, salt and cinnamon in large bowl until well blended. Add four and whisk until batter is smooth. Place butter in 13x9 baking dish and place in oven until melted, about 5 minutes. Remove dish from oven. Place apple slices in overlapping rows atop melted butter.
- Return to oven and bake until apples begin to soften slightly and butter is bubbling and beginning to brown around edges of dish, about 10 minutes. Pour batter over apples and sprinkle with brown sugar. Bake 20 minutes more until puffed and brown.
