Chocolate Chip Muffins: Breakfast-Brunch

Servings: 12

Prep time:30 minutes

Ingredients:

  • 2 cups flour

  • 1/2 cups sugar

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1 egg, beaten

  • 1 cup milk

  • 2 teaspoons vanilla extract

  • 1 cup mini chocolate chips

Step 1:

Preheat oven to 375 and grease a 12 cup muffin pan with vegetable oil spray.

Step 2:

Mix together first four ingredients in medium bowl. In separate bowl mix together liquid ingredients. Add liquid ingredients to dry ingredients and mix until just moistened. Fold in mini chocolate chips. Batter should be lumpy, overmixing will cause muffins to become tough.

Step 3:

Divide batter between 12 muffin cups and bake for 15-20 minutes until tops are golden. Remove from pan and cool on a rack.
