Irish cheddar biscuits

Serves: 6Ingredients:
- 3 cups all purpose flour
- 3/4 cup shredded Irish cheddar cheese
- 2 tablespoon Baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon Ground black pepper
- 1 stick chilled unsalted butter cut into 1\2” cubes
- 1 cup whole milk
Steps:
- Preheat oven to 400.
- Combine flour, baking powder, salt and pepper in a large mixing bowl until well blended. Add butter and rub in gently with fingers until well blended then add cheese and mix thoroughly. Gradually add 1 cup milk with fork until moist clumps form (adding more milk by tablespoons if too dry). Gather dough into a ball. Press out on a lightly floured surface to make an 8 inch round, about 1” thick. Using a 2”round cutter, cut out biscuits. Press out dough until all is used. Place parchment paper on a large baking sheet and arrange biscuits. Place in oven and bake until light golden color and centers are cooked, about 15 minutes.
- Place in a towel lined basket and serve warm.
Yields about 12 biscuits
