Buttermilk Scone for 2

We discovered this recipe when we were putting together our collection in preparation for opening our inn. Kit made me breakfast in bed every morning while he was in training to become an innkeeper/breakfast chef. This is one of my favorite morning treats.

Total preparation time:  45 min.
Serves:  2

Ingredients:

  • 1 cup flour
  • 1 1/2 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1/4 cup cold butter
  • 3 tablespoon currants
  • 1/4 cup cold buttermilk
  • 1/8 teaspoon cinnamon mixed with 1/2 tsp. sugar

Steps:

  1. Preheat oven to 375. Combine flour, sugar, baking powder and baking soda. Add butter; mix with fingers or fork to form fine crumbs. Stir in currants. Make well, and pour in buttermilk. Stir with fork until dough holds together.
  2. Pat dough into a ball and knead lightly 5 or 6 turns on lightly floured surface. Shape into smooth ball and place on greased pan. Sprinkle with cinnamon sugar mix.
  3. Bake for 10 minutes then cut a cross on the tip 1/2" deep. Bake another 20 minutes or until golden. Serve warm.
