Very Berry Buckle

Total preparation time:  1 hour
Serves:  15

Ingredients:

  • 6 oz softened butter (note two uses within recipe)
  • 1/2 cup brown sugar
  • 1/2 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 2 1/2 cups flour (note 2 uses within recipe)
  • 3/4 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 zested lemon
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 4 cups berries
  • 1/2 cup milk

Steps:

  1. To make topping: Combine 3 ounces softened butter and brown sugar together by hand. Add ginger and cinnamon, mix to combine. Add 1/2 cup flour, mix to combine. Refrigerate.
  2. Preheat oven to 375 degrees. Prepare 9x13 inch pan with non-stick spray.
  3. Combine remaining 2 cups flour, baking powder, and salt in a medium bowl. Cream remaining 3 ounces softened butter and sugar in a large bowl. Add egg, vanilla, and zest. Mix until combined. Add half of the dry ingredients and mix until combined. Add half of the milk and mix until combined. Repeat with remaining dry ingredients and milk.
  4. Fold half of the berries into the batter. Spread batter into prepared pan. Top with remaining berries. Remove topping from refrigerator and crumble on top of the buckle.

The Robert Spence Jr. Room features a private covered balcony.  It is furnished with a queen sized heirloom metal bed, and a matching antique vanity and chest of drawers of ornately carved oak with burlwood overlay.  The bed features a handmade quilt made by Lisa's grandmother in shades or rose.From the Alma Mary room, enjoy the private porch overlooking a huge southern magnolia tree and red brick streets.   The perfect spot to relax and enjoy a cup of coffee!
The Manor boasts 17 original stained glass windows, doors, and transoms.  This beautiful bay window is in the Alma Mary room.Enjoy a delicious country breakfast in the dining room and enjoy conversation with your fellow guests and hosts.
Three of our rooms have private fireplaces to keep you warm on a cold winter night.  Or relax and enjoy the fireplace in the front parlor.The Richard McLeroy room features an antique spindle bed, and a claw-foot tub in its private bathroom.
The Rockway Carriage House is located behind the main house, and features 700 square feet with all the comforts of home.  Relax in the living room or prepare a snack in the kitchen.  Great for extended stay!
