King's Delight Cake

This recipe was one of my favorite cakes made by my mother. She would make it when friends would come over for an evening of card games. The games would end around 11:00 PM and a lunch consisting of King's Delight Cake would be served.

Total preparation time:  50 minutes
Serves:  9

Ingredients:

  • 1 cup sugar
  • 1/4 cup shortening
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 cup chopped walnuts
  • 2 cups diced apples
  • 1 cup flour
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 2 tablespoons hot water

Steps:

  1. Cream shortening and sugar. Add egg, vanilla, nuts, and apples. Mix well. Add flour, cinnamon, nutmeg, and salt. Dissolve baking soda in hot water and add to batter. Mix well until blended.
  2. Bake in greased 9 x 9 inch pan at 350 degrees for 35-40 minutes.
  3. Note: This recipe can be doubled using a 9 x 13 inch pan and can be served slightly warm with whipped cream. This is a nice breakfast cake and is especially good in the fall and winter when fresh fruit is not available.
  4. A wonderfully warm cinnamon aroma permeates the house as it bakes.

THE BALLROOM SUITE This spacious and comfortable suite is located on the third floor of the house. The third floor was intended by the builders of the house to be a ballroom, hence the name of this suite. The Ballroom Suite includes a queen-sized bed beneath the cathedral ceiling, a private bath with a whirlpool tub and shower, and a sitting area. The Isabella Room Isabella was a daughter of the Jensen family who built this house. Her short life ended at only five years of age, so she never actually got to live in this house, but nevertheless we've named this room after her.
