Harvest Soup: Soup

Ingredients:

  • 1 lb Fresh Sliced Mushrooms

  • 1/2 cup Chopped Onion

  • 2 tablespoon Butter

  • 2 tablespoon Flour

  • 1/2 teaspoon Curry Powder

  • 3 cup Vegetable Broth

  • 1 can Solid Pack Pumpkin 15oz can

  • 1 can Evaporated Milk 12 oz can

  • 1 tablespoon Honey

  • 1/2 teaspoon Salt

  • 1/2 teaspoon Pepper

  • 1/4 teaspoon Ground Nutmeg

  • 1 Fresh Chives (Optional)

Step 1:

In a large saucepan, saute mushrooms and onion in butter until tender.

Step 2:

Stir in the flour and curry powder until blended.

Step 3:

Gradually add the broth. Bring to a boil; cook and stir for 2 minutes or until thickened.

Step 4:

Add the pumpkin, evaporated milk, honey, salt, pepper, and nutmeg. Heat through.

Step 5:

Garnish with chives. (Optional)
