Cream Scones

I found this in a magazine a year ago and no matter how many flavored scones I try it can never top this one! We now prepare the mix and sell it to our guests.

Total preparation time:  20
Serves:  8

Ingredients:

  • 2 cups flour
  • 1 tablespoon Baking soda
  • 1/8 teaspoon salt
  • 1/4 cup white sugar
  • 1/3 cup real butter, cut up in peices
  • 1 cup heavy whipping cream

Steps:

  1. Mix flour, sugar, baking powder and salt. Cut in butter with a pastry cutter.
  2. Add cream and mix to form a stiff batter. It may not cling completely together.
  3. Turn out and kneed 5-10 times to form dough. Add flour ONLY as necessary.
  4. Divide dough in 2 equal parts. Pat each into a circle about 1/2 " thick. Cut each in to 6 wedges.
  5. Bake at 375 for 12-15 or just until slightly browned on bottom. Do Not overbake. Serve warm with honey butter or jams.
