Carrot Cake


Serves:  8

Ingredients:

  • 4 eggs
  • 2 cups sugar
  • 1 cup cooking oil
  • 2 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 2 teaspoons vanilla
  • 3 cups grated carrots
  • 1/2 cup chopped nuts
  • 1/2 cup raisins
  • Frosting:
  • 1 8 oz. package cream cheese, softened
  • 1/2 cup butter or margarine
  • 2 cups powdered sugar
  • Lemon juice or milk as needed
  • 1 cup chopped nuts

Steps:

  1. Mix together sugar and eggs; add the oil and beat well. Add the dry ingredients to the above mixture and beat again. Add the vanilla, carrots, nuts, and raisins to mixture and mix well. Pour mixture into three 9-inch greased cake pans and bake 25-30 minutes at 350 degrees F. Let cool then frost.
  2. Frosting: Mix together cream cheese, margarine and powdered sugar. If too stiff, add lemon juice or milk until spreading consistency is obtained. Add nuts to the mixture and frost cake.
