Basil Vinaigrette

- peeled Shallot
- 2 tablespoons fresh basil leaves, tightly packed
- 3/4 cup extra-virgin olive oil
- 1/4 cup red wine vinegar
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- freshly ground pepper, to taste
Steps:
- Using a food processor fitted with a steel blade, drop the shallot through the feed tube with the maching running. Remove the cover and scrape down the sides of the bowl. Add the basil, olive oil, vinegar, sugar, salt, and pepper, and process until the ingredients are well mixed.
