Refrigerator Bran Muffins

Ingredients:

  • 2 cups All-Bran Cereal
  • 1 lb Box seedless raisins
  • 2 cups Boiling water
  • 1 cup Corn oil
  • 2 cups Molasses
  • 4 Eggs, well beaten
  • 1 quart Buttermilk
  • 3 cups All bran cereal, dry
  • 5 cups Flour
  • 5 teaspoons Baking soda
  • 1 teaspoon Salt
  • 1 cup Sugar

Steps:

  1. Add raisins to the 2 cups of bran. Pour the boiling water over the mixture. Set aside to cool.
  2. Place 1 cup granulated sugar into a very large bowl. Stir following ingredients; corn oil, molasses, eggs, buttermilk, and 3 dry cups of all-bran, into the white sugar in order given:
  3. Lastly, mix into the cooled raisin-bran mixture.
  4. Store this in covered quart jars in the fridge. Keeps for up to 2 months.
  5. Spoon into buttered muffin pans, 2/3 full, bake in pre-heated 400 degree oven for exactly 20 minutes.
