Mississippi Cornbread Salad

Serves: 8Steps:
- 1 (8 1/2 oz) pkg cornbread muffin mix
1 (1 oz )pkg Ranch style salad dressing mix
1 (8 oz )container sour cream
1 cup mayonnaise
3 large tomatoes,chopped
1/2 cup chopped red bell pepper
1/2 cup chopped green bell pepper
1/2 cup chopped green onions
1 (16 oz) cans pinto beans, drained
2 cups shredded cheddar cheese
10 bacon slices,cooked & crumbled
2(15 oz) cans whole kernel corn,drained
- Prepare cornbread muffin mix according to pkg direction;cool. Stir together salad dressing mix,sour cream & mayo til blended & set aside.
- Combine tomatoes & next 3 ingredients, gently toss.
Crumble half the cornbread into a 3 Qt. Trifle bowl or large salad bowl. Top with half each: beans, tomatoe
mixture, cheese, bacon, corn & dressing mixture...Repeat
layers.
- Cover & chill 3 hours.
Yields 8 - 10 Servings. Your own recipe for an 8 in.
square pan of cornbread may be substituted for the Mix.
