Harrington House Beachfront B&B Buttermilk pancakes: Breakfast-Brunch

Ingredients:

  • 2 cups Flour

  • 2 tablespoons Sugar

  • 3 tablespoons Baking Powder

  • 1 teaspoon Baking Soda

  • 1 teaspoon Salt

  • 2 Eggs

  • 2 cups Buttermilk

  • 4 tablespoons Oil

Step 1:

Combine Flour, Sugar, 2 Heaping teaspoons baking powder, Baking Soda, Salt. You can mix this ahead and store in your pantry until ready to use!

Step 2:

In Separate bowl combine: Eggs, Buttermilk, Oil

Step 3:

Once combined add liquid to dry ingredients and blend until flour is moistened but slightly lumpy. The Secret? Don't ever mix the batter.

Step 4:

Bake on lightly greased griddle.

Step 5:

We serve with fresh fruit, strawberries, warm banana sauce or Warm Orange sauce. Our Brown Sugar Syrup is wonderful... Over low heat, melt 1/4 cup butter, add 1/4 cup water, 2/3 cup brown sugar and 1/3 light corn syrup. Stir to thicken. We serve three (3) to each guest. You can also stack the pancakes 3 high with fruit in between each layer with Fresh whipped cream, Rasberry Melba sauce and Coconut.
