Curried red lentil soup

Total preparation time:  45 minutes
Serves:  8

Ingredients:

  • 6 cups Chicken broth
  • 4 cups Water
  • 1 onion chopped coursely
  • lb bag red lentils
  • 2 tablespoon Olive oil
  • 3/4 teaspoon Curry powder

Steps:

  1. Mix all ingredients in stockpot and bring to boil, simmer partially covered for 40 – 45 minutes. Puree with stick blender until smooth. Mix in olive oil and curry powder. Puree again. Cool and then divide into containers. Can be frozen. Can serve in demitasse cups for up to 36 for sipping.
