Puff Pancakes with Fresh Fruit

- 1 egg
- 1/4 cup milk
- 1/4 cup flour
- 1/4 teaspoon almond extract
- 1/4 teaspoon Lemon Zest
- 1 tablespoon butter
Steps:
- For each serving: spray 4 inch ramekin with non-stick spray and place 1 Tablespoon butter in ramekin.
Preheat oven to 475 degrees.
- Whisk egg. Add milk and almond extract, whisk.
- Add flour and lemon zest, whisk.
- Place ramekin in pre-heated oven. Melt butter. Add 1/2 cup pancake batter and bake for 12-14 minutes. Pancake will puff up and brown.
- Remove from ramekin. Fill with fresh fruit such as any type of berry, fresh peaches, canned pie fillings. Be creative. Serve with warm maple syrup.
