Puff Pancakes with Fresh Fruit

Total preparation time:  15 min.
Serves:  2

Ingredients:

  • 1 egg
  • 1/4 cup milk
  • 1/4 cup flour
  • 1/4 teaspoon almond extract
  • 1/4 teaspoon Lemon Zest
  • 1 tablespoon butter

Steps:

  1. For each serving: spray 4 inch ramekin with non-stick spray and place 1 Tablespoon butter in ramekin. Preheat oven to 475 degrees.
  2. Whisk egg. Add milk and almond extract, whisk.
  3. Add flour and lemon zest, whisk.
  4. Place ramekin in pre-heated oven. Melt butter. Add 1/2 cup pancake batter and bake for 12-14 minutes. Pancake will puff up and brown.
  5. Remove from ramekin. Fill with fresh fruit such as any type of berry, fresh peaches, canned pie fillings. Be creative. Serve with warm maple syrup.
