Cream of Pear Soup: Appetizer-Snack

Servings: 10

Prep time:15 minutes

Ingredients:

  • 5 ripe, juicy pears

  • 1 can white grape peach juice concentrate

  • 1 8 oz carton Cool Whip

  • 1/2 teaspoon nutmeg

  • 1/3 cup sugar

  • fresh mint leaves

Step 1:

Peel, halve and core pears. Arrange in single layer in baking dish. Sprinkle with sugar and nutmeg. Add enough water to dish to cover bottom.

Step 2:

Cook pears in microwave until tender. Approximately 8 minutes.

Step 3:

Place pears in blender. Add juice concentrate (still frozen) and Cool Whip. Blend until smooth.

Step 4:

Serve chilled in small glass bowls. Garnish with fresh mint leaves. Homemade muffins on the side add just the right touch.
