Heather's Pumpkin Roll
Total preparation time: 30 minutes
Serves: 8Ingredients:
- 4 Whole Eggs
- 1 box Aspen Mulling Spice
- 3/4 cup All-purpose flour
- 2/3 cup pumpkin puree
- 1 teaspoon baking powder
- 1/2 teaspoon fine sea salt
- 8 oz cream cheese
- 4 tablespoons butter
- 1 cup confectioners sugar
- 1/2 teaspoon pure vanilla extract
Steps:
- soften cream cheese & butter for later use.
preheat oven to 350 degrees
- beat 4 eggs with Aspen mulling spice for 5 minutes on high with electric mixer
- gradually mix in pumpkin puree
gradually mix in flour, salt & baking powder
- line 1/2 sheet pan with aluminum foil so that foil overhangs edges, but fits snugly around corners, spray with non-stick pan spray. Pour mixture. Bake for 15 minutes at 350 degrees. Use aluminum foil to roll cake & place in refrigerator to cool for at least 45 minutes
- mix softened butter, cream cheese, confectioner's sugar & vanilla extract.
Unroll chilled cake, spread with icing mixture, re-roll cake & refrigerate until serving.
