Lobster Frittata

Serves: 2Ingredients:
- 3 oz diced Lobster Tail meat
- 2 oz cooked Potatoes
- 1 oz diced, cooked asparagus
- 3 Eggs, cracked & whipped
- 1 oz Gruyure Cheese
- 1/2 oz Butter
- 1/2 oz Chopped Roasted Pepper
Steps:
- Saute Lobster meat in butter. Add potatoes, Red Pepper, and ASP. Fold in Beaten Eggs, cook mixture gently, folding eggs when omelet starts to set. Flip top with Gruyure cheese.
- Put into 450o oven for 3 minutes or until cheese is completely melted. Enjoy!
