Ricotta Square Coffeecake

Serves: 12Ingredients:
- 1 Butter Cake Mix
- 3 Eggs
- 3/4 cup Sugar
- 2 teaspoons Vanilla
- 15 oz Ricotta Cheese
Steps:
- Mix cake mix according to the directon on the box and pour into a 9x13 inch glass pan. (Do not grease)
- Beat eggs, add sugar, vanilla and the ricotta cheese. This will be of a watery consistency.
- Pour the cheese mixture on top of the unbaked cake and spread evenly to cover the cake. During baking the cheese mixture will sink to the bottom.
- Bake 45 - 50 minutes at 350 degrees.
- Sprinkle with powdered sugar when cooled. Keep cake refrigerated in the glass pan. Cake also freezes well.
