Packard House Blueberry Gateau

Ingredients:

  • 1 cup Flour
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 4 oz Unsalted Butter, softened
  • 1 cup Sugar
  • 1/4 teaspoon Vanilla
  • 2 Large Eggs
  • 2 cups Maine Blueberries
  • 1 teaspoon Lemon Juice
  • Confectioners' sugar for garnish

Steps:

  1. Preheat oven to 350 degrees. Lightly grease a 9 inch springform pan or cake pan with cooking spray and dust with flour. If using a cake pan line the bottom with parchment paper before spraying and dusting.
  2. In a small bowl, combine 1 Cup flour with the baking powder and salt, set aside. Using an electric mixer on medium to high speed, combine the sugar, vanilla and butter until light and fluffy, about 3 minutes. Add the eggs one at a time and continue beating until well blended. Reduce the speed to low and gradually add the flour mixture. Beat until smooth. Pour batter into prepared pan.
  3. In a medium bowl, combine the berries with the remaining 1 teaspoon of flour and the lemon juice. Spoon the berry mixture over the batter.
  4. Bake for 1 hour or until toothpick inserted in center comes out clean. Remove from oven and let cake cool in pan for 10 minutes. If using springform pan, run knife around edges of the cake to release before you remove sides. If using cake pan, slide thin knife around edge and invert onto cake rack. Transfer to platter berry side up.

The Down Easter Room, named for the classification of ships that included the “Benjamin F. Packard”, showcases a queen-size cherry four-poster bed. The antique rocker, dresser and side tables create a mid 1800’s feel that belies the modern amenities. The private bath with tile floor has a tub/shower to make your stay complete.The Niagara Room is a tribute to the owner’s previous home town; Erie, Pennsylvania. Named for the US Brig Niagara, Commodore Oliver Hazard Perry's flagship used during the Battle of Lake Erie, this maritime themed room is rigged with photos and ship plans of the famous ship. Featuring a queen-size brass and iron bed as the room's focal point coupled with antique furnishings and a private bath.
The Packard Room is our largest guest quarters providing luxury and privacy. It is located in the most secluded area of the house, providing the extra privacy which many couples enjoy. The spacious room features a king-size bed, antique dresser and bedside tables and a comfortable reading chair. A private bath has twin sinks and a tub/shower combo. The window view overlooks our private garden and patio. 
Our Garden Suite has a large bedroom with a queen-size bed, a comfortable sitting room and a private bath with a shower. The sitting room allows for additional sleeping space on the pull out queen sofa bed. This is ideal for parents and one or two teenagers. There are two great views; the bedroom overlooks our garden and patio while the sitting room overlooks the front of the house. The rooms' garden themed décor brings the garden inside all year round.
