Sea Salt, Black Pepper, and Scallion Biscuits

Total preparation time:  30 min.
Serves:  10

Ingredients:

  • 1 cup all purpose flour
  • 1 cup cake flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon sugar
  • 1/2 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1/2 bunch scallions, trimmed and chopped into small pieces (include both white and green)
  • 8 tablespoons unsalted butter, frozen, plus a little extra for brushing
  • 3/4 cup cold buttermilk

Steps:

  1. Preheat oven to 450F.
  2. Whisk flours in large mixing bowl. Grate frozen butter into flours and mix with hands until well distributed. Whisk in baking powder, soda, sugar, salt and pepper.
  3. Add chopped scallions to buttermilk and then to flour mixture. Gently incorporate wet into dry ingredients.
  4. When a dough has been achieved, turn out onto floured board and gently form into a rough square about 1 inch thick and cut into 8-10 squares (this is an estimate – you can make them whatever size you want to).
  5. Place on cookie sheet and brush with melted butter; sprinkle with coarse sea salt and black pepper and bake for 10-12 minutes, or until lightly brown on the top.

The Library has a hand-carved pencil post king bed, gas fireplace, flat panel TV/DVD, CD player, luxurious private bath with double whirlpool tub, and a private porch.All but two of our guest rooms have beautiful gas fireplaces like this one in Lois Walker.
Breakwater, possibly our most luxurious room, boasts an oversize king bed and a suede chaise by a sleek gas fireplace.  Soft modern meets 1813 Federal Style.Enjoying the fall foliage begins right out the front door, as the Inn is surrounded by centuries-old Elms and Maples, and other beautifully restored historic homes.
Sweet Liberty stylishly pairs a grand upholstered queen bed and plush couch with a cream toile wallpaper and wide pine floors. The private bath features a luxurious tiled rainfall shower.Breakfast at the Captain Fairfield Inn is the most celebrated time of day.  When you wake to the smell of freshly brewed coffee, you can wander down to the dining room to experience a breakfast prepared in the finest of Maine traditions.  Four courses later you will be on your way and may not need to eat again until dinner!
