Lime Marinated Scallops with Coconut Sauce
Serves: 4Ingredients:
- 1 lb fresh scallops
- salt
- freshly ground pepper
- melted butter
- lime wedges
- 1/2 cup sour cream
- 1 cup coconut milk
- 2 scallions, finely chopped
Steps:
- Thread scallops on bamboo skewers. Season with salt and pepper and brush with butter. Combine sour cream, coconut milk and scallions, blend well.
- Grill scallops quickly over hot coals, approximately 1 minute on each side. Serve on a platter garnished with lime wedges.
- Give each guest a small bowl of dipping sauce and enjoy.
