Lite Spinach Quiche
Total preparation time: ~10 minute
Serves: 8Ingredients:
- 1 package chopped frozen Spinach, thawed and drained
- 1 cup sour cream
- 1 cup cottage cheese
- 2 eggs
- 1/2 cup Baking Mix (Bisquick)
- 1/4 cup melted margarine
- 1/4 teaspoon lemon pepper
- 1/4 teaspoon dill weed
- parmesan cheese
- dash paprika
Steps:
- Preheat oven to 350, grease a pie pan.
- Squeeze out any extra moisture in the spinach. Spread spinach on bottom of pie pan. You may find one package is too much, so use what best suits your taste.
- Beat the next five ingredients, lemon pepper and dill weed until light; pour over the spinach. Sprinkle with parmesan cheese and a little paprika.
- Bake at 350 for 35 minutes, or until knife inserted just off center comes out clean. Cut into slices and serve warm. 6-8 servings depending on slice size.
