Pumpkin Roll

Serves: 15Ingredients:
- 2/3 cup canned pumpkin
- 3 eggs
- 1 cup sugar
- 3/4 cup flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 8 oz softened cream cheese
- 1 cup powdered sugar
- 1 teaspoon vanilla
- 2 teaspoon butter
Steps:
- Mix all ingredients together and spread in jellyroll pan lined with greased waxed paper.
Bake @ 375 for 12-15 minutes – DO NOT OVERCOOK

- Beat the icing ingredients together until smooth.
(softened cream cheese,powdered sugar,vanilla,butter)
- Remove roll from refrigerator, roll out flat and spread icing on it.
Re-roll pumpkin roll with icing on the inside.
Refrigerate until served.
