Blueberry-Stuffed French Toast

Serves: 8Ingredients:
- 8 oz cream cheese
- 12 slices white bread
- 1 1/2 cup fresh or frozen blueberries
- 1 dozen eggs
- 2 cup milk
- 1/3 cup pure maple syrup
Steps:
- thickly spread cream cheese on 6 slices of white bread. Place bread (cream cheese side up) on the bottom of a greased 9x13" baking dish.
- Evenly distribute 1 1/2 cups blueberries on top of the bread with the cream cheese.
- Cube the remaining 6 slices of white bread and sprinkle over the blueberries.
- Combine eggs, milk and maple syrup and mix well. Pour this mixture over the bread cubes. Refigerate overnight.
- Bake at 350 degrees for 1 hour (1/2 hour covered with aluminum foil, 1/2 hour uncovered). Serve with pure maple syrup.
