Grilled Vegetables with Balsamic and Goat Cheese

- 1 Zucchini
- 1 Eggplant
- 1 Each, Red, Yellow and Green Pepper
- 1 Spanish Onion
- 2/3 cup Olive Oil
- 1/3 cup Balsamic Vinegar
- 2 Cloves of Garlic, finely chopped
- 1/2 cup Crumbled Goat Cheese
Steps:
- Slice Zucchini and Eggplant in long, thin slivers, slice peppers in thick slivers and slice onion in thin rounds.
- Put vegetables in large ziplock bag
- mix oil, vinegar and garlic, pour into bag, lock and shake
- Grill vegetables
- serve with goat cheese crumbled on top.
