Pumpkin bread

Total preparation time:  10 minutes
Serves:  10

Ingredients:

  • 2 1/2 cups sugar
  • 2/3 cup oil (canola or safflower)
  • 16 oz. can pumpkin
  • 4 eggs
  • 3 1/3 cups flour
  • 2 teaspoons Baking soda
  • 1/2 teaspoon Baking powder
  • 1/2 teaspoon ½ tsp. Salt
  • 1/2 teaspoon salt
  • 1 1/2 tablespoons Ground Cloves
  • 1 1/2 tablespoons Cinnamon
  • 2/3 cup milk
  • 2/3 cup dried cranberries (or raisins)
  • 2/3 cup chopped walnuts (optional)

Steps:

  1. Preheat oven to 300 degrees Spray loaf pans (2 large or 5 small) with Pam or oil
  2. MIX SUGAR, OIL AND PUMPKIN BY HAND OR MIXER. BEAT IN EGGS, ONE AT A TIME
  3. SIFT DRY INGREDIENTS TOGETHER. ADD DRY INGREDIENTS TO PUMPKIN MIXTURE ALTERNATELY WITH MILK
  4. ADD FRUIT AND NUTS TO BATTER
  5. BAKE AT 300 DEGREES FOR 1 ¼ HOURS (check at one hour if using small pans). Cool 10 minutes before removing from pans. Freezes well

Garden Bedroom is a quiet, comfortable space which overlooks the back gardens of Harborside House. It features a double bed, desk, bureau and antique dressing table.Harbor Bedroom is a large sunny room which looks out on the harbor. Watch the sunrise in the morning; listen to the waves at night. It features mahogany twin beds,writing desk and bureau.
