Italian biscotti
Total preparation time: 35 minutesIngredients:
- 2 beaten eggs
- 1/2 tablespoon vegetable oil
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla or almond extract
- 1 chopped almonds or walnuts
- 1 grated orange peel
- 2 cups flour
- 1 cup sugar
Steps:
- Mix all ingredients in large bowl. Mix well, kneading dough so it is compact (no holes). Form batter into two long rolls, about 2-4” in diameter.
- Bake rolls at 350 degrees on ungreased cookie sheet (insulated type works best) for 20 minutes. Take out. Let cool slightly
- . Remove rolls carefully to cutting surface and slice diagonally ½”” thick. Lay pieces cut side down on cookie sheets and bake for additional 15 minutes (lightly browned.)
- OPTIONAL: Dip one end of cooled cookies in melted chocolate. Yum!
