Zucchini Bread
Total preparation time: 1 hour
Serves: 8Ingredients:
- 2 eggs
- 1 cup Canola or Safflower oil
- 1 cup sugar
- 2 cups grated zucchini
- 2 teaspoons vanilla
- 2 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 tablespoon ground cinnamon
- 1 cup chopped walnuts
- 1 cup raisins
Steps:
- Grate unpeeled zucchini in Cuisinart
Mix first six ingredients together in a large bowl.
- Sift flour, baking powder and baking soda and cinnamon together
- Add to the first mixture. Mix well. Add nuts and raisins.
Lightly grease loaf pans (2 large or 4 small).
Fill and bake at 350 degrees for one hour.
- Let cool ten minutes then turnout on baking rack to cool completely.
This bread freezes well.
