Deerfield Inn Eggplant Soup
Total preparation time: apx 1/2 hr
Serves: 4Ingredients:
- 1/4 cup onion
- 1 medium peeled eggplant
- olive oil for basting
- 1/2 cup green chilis
- 1 quart chicken stock
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 5 roasted garlic cloves
Steps:
- Slice eggplant and season with olive oil, salt and pepper, and grill
- Saute chopped onion until translucent
- Add everything else and simmer ½ hour
- Puree and serve
