Southwest Tostadas
Total preparation time: 25 minutes
Serves: 4Ingredients:
- 4 6' corn tortillas
- mix 2 teaspoons olive oil & 2 1/2 teaspons chipotle pepper sauce
- brush tortillas with sauce and bake in 350 oven for 15 minutes so they are crisp
- 8 ounces skirt steak sprinkled with salt . In heavy skillet over medium high heat cook steak
- removed steak from skillet , let cool 5 minutes
- scramble 6 eggs, 1/2 teaspoon salt,2 teaspoons chipotle pepper sauce to desired doneness
- to serve top each tortillas with eggs,steak,chopped avocado, salsa,a sprinkle of cilantro
- display on your favorite platter with fresh tomato slices and enjoy
