Happy Apple Pancakes with Cinnamon Cream Syrup

Ingredients

  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 3 cups grated apples (about 5 large)
  • 2 1/2 cups sour cream
  • 2 eggs, slightly beaten
  • 1 teaspoon apple liqueur (or apple cider)

  1. whisk together dry ingrediens in large bowl. In another bowl combine remaining ingredients and mix well. Add to dry ingredients and stir until just blended.
  2. Preheat griddle; brush with canola oil. Pour a small serving spoonful for each pancake, bake 3 to 5 minutes, turn and bake other side. Makes about 25 small pancakes
  3. Cinnamon Cream Syrup
  4. 1 cup sugar 1/2 cup light corn syrup 1/4 cup water 1/2 teaspoon cinnamon 1/2 cup heavy cream
  5. Combine everything but heavy cream. Bring to boil. Stir in heavy cream and keep warm until ready to serve.
