Pumpkin Chiffon Pie

My mom has made this pie for years. It's one of my favorite memories of Thanksgiving. She would keep the pies cool in our unheated patio. One year my two older brothers snuck in and ate both pies for Thanksgiving, so we had to get by with just apple that year.

Total preparation time:  30 minutes
Serves:  8

Ingredients:

  • 1 envelope unflavored gelatin
  • 1 9 or 10 inch pie shell
  • 3/4 cup firmly packed brown sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1/2 cup milk
  • 3 eggs separated
  • 1/4 cup water
  • 1 1/2 cups canned pumpkin
  • 1/4 cup sugar
  • whipped cream, Redi Whip or Cool Whip

Steps:

  1. Mix gelatin, brown sugar, salt and spices into saucepan. Stir in milk, water, egg yolks and pumpkin and mix well. If you mix the water, yokes and milk first and then add the pumpkin it blends easier.
  2. Cook over medium heat, stirring constantly until gelatin is dissolved and mixture is heated through, about ten minutes. When it bubbles, it spatters, so be careful.
  3. When mixture is thick enough to coat spoon, remove from heat. Cover with wax paper to prevent mixture from forming a "skin" and chill, stirring occasionally.
  4. Beat egg whites until stiff. Beat in 1/4 cup sugar. Fold gelatin mixture into the beaten egg whites. Turn into baked crust. Chill until firm and top with whipped cream before serving.
  5. The perfect light dessert after a heavy meal.

Bruce's artwork is showcased in the Sitting Room/Art Gallery.  It ranges from whimsical wildlife to many local scenes, all drawn in colored pencil.The Garden Suite is a spacious romantic paradise.  Hand-painted walls make you feel like you are walking under an arbor that's always in bloom.  Enjoy the whirlpool tub for two while looking at the gas stove/fireplace.  A private porch is a favorite for star gazing.
The Rose Room features hand-painted walls with roses cascading down, American antiques and locally made Amish quilts.  Relax in the robes and enjoy cable TV in your sitting room, put together a puzzle on the table, or read of book curled up in the rocker by the fireplace.The Kriss Kringle room is decorated for Kriss's favorite time of year - Christmas.  Waverly fabrics and wallpaper accent the Amish quilt.  A child's sleigh adorns the top of the amoire - part of a French oak suite that was the innkeeper's wedding gift to each other.

Mountain Pink in springOur Victorian porches invite you to sip lemonade, enjoy the cool summer breezes that come up from the valley, and listen to the clip-clop of Amish buggies as they drive by the inn.  Be sure to stroll through the extensive gardens.  If you take the steps to the third floor, you'll be able to sit at the built-in nook and enjoy a bird's eye view of the farm-filled Weaverland Valley.  This is the view of the Garden Suite private porch on the second floor.
