Featured in Inns Magazine/Spalife vol 13 issue 2 12 eggs, 1 med. onion, 1 cup reg unflavoured yogurt, 4 oz butter, 1/2 cup shredded hash brown potatoes, uncooked, 4 oz grated old cheddar cheese, 4 oz. frozen spinach, defrosted & well drained, 1 Tsp Lawry's salt.combine the salt, yogurt & eggs and beat on high until blended. Melt butter and saute onion with hash browns & stir. Cool. In bowl add spinach & h.b.to egg/yogurt,pour into 9" pan and add cheese. Bake in preheated oven 350 oven for 35-45. let stand for 10 minutes.
