Quintessentials is the perfect bed and breakfast for any trip with that special someone. Especially if it's to visit Long Island's North Fork Vineyards. Sylvia is an amazing hostess, dazzling her guests with beautiful rooms, entertaining intellectual conversation and exquisite gourmet breakfasts. if I could move in, I would have my bags already packed!!

Quintessentials Fish & Zucchini Dish 1 lb of Cod steamed & flaked with fork 1 lb of Zucchini, peeled, and diced 1 large onion 1 large tomato 2 cloves of garlic 3 to 5 thin slices Jamaican Scotch Bonnet pepper 3 tablespoons olive oil Steam zucchini and strain. Peel and slice onions in quarters, dice tomatoes and chop garlic finely. In saucepan, heat oil and sauté onion, garlic, and Scotch Bonnet pepper, then add diced tomatoes. Add fish. Add steamed zucchini. Stir and cook for another 5 minutes on low heat. Serve with fried green plantains, or wholegrain loaf as breakfast or light lunch.
