    Signature Dish

    Homemade full grain German bread
Ingredients: 3 cups of regular white flour 3 cups of rye flour 3 cups of whole wheat flour 1 cup of plain yogurt 2 cups of water 3 tsp of dry yeast 1 TB of salt some walnuts and/or seats (pumpkin, flax, sunflower or whatever you like) Preparation: This bread takes 2 days to make. The first day you mix 1 1/2 tsp of yeast with 1 cup of white flour, 1 cup of rye flour and 1 cup of whole wheat flour. In another bowl you whisk the yogurt and the water and add them to the flour. Mix thoroughly and let that mush stand covered (some plastic bag and a kitchen towel will do) over night at a warm place. The second day you blend in the rest of the flour, another 1 1/2 tsp of yeast and the salt. Now you have to do the kneading. The dough should be at the end not too wet and not too dry. The best is when it is just coming off the rim of the bowl without sticking. If necessary you can add more flour, preferably white flour because too much whole grain might make the bread too hard at the end. (A Kitchen Aid is a big help for the kneading part). Now let the bowl with the dough stand for 1 hour at a warm place. The bread should rise a little bit while resting. After this you do more kneading and add the nuts or seats. Again the bread dough should still be not too dry and not too wet and it should be easy to form a ball out of it. What you need now is a bread basket (You can get them in good kitchen utility stores). It is a round wicker basket that fits around 2 pounds of bread dough. You spray it with cooking spray and dust it with flour. The ball of dough goes in there. Cover the basket with plastic and kitchen towel and let the bread dough rise again for 45 minutes. At the end the dough should have been risen to the edge of the bread basket. Preheat your oven to 480 F and have a deeper baking sheet filled with water on the lower level of the oven. The bread needs steam to bake. Grease another cooking sheet and place the bread right on top of

My husband and I first stayed at Carpe Diem for our wedding in P'town in 2009 and have returned several times since then. Carpe Diem is an oasis in the middle of the fun craziness of Provincetown. From check inn to check out you'll feel pampered: the rooms (all different but equally charming and for different budget sizes) are super clean with a lot of light, very comfortable beds; the afternoon wine & cheese hour is the perfect opportunity to meet other guests; the spa is FANTASTIC (the best steam room I've ever seen!); and then the breakfast: everything you could desire! From fresh muffins and bread, perfect bircher muesli, fresh fruit, great coffee to the daily special - simply great and usually we can't even do a lunch after that. And last but not least, Carpe Diem lives mostly from the 3 incredible nice innkeepers and all their equally nice staff! You are fantastic, guys!

We recently spent a week at Carpe Diem - our first visit - but certainly not our last. Not only is the place beautiful and well maintained, but its owners and staff couldn't be friendlier or more accommodating. We met a variety of nice people from all over, and most have stayed here multiple times. Absolutely wonderful.

There are not enough superlatives to describe Carpe Diem. All I can say is you get what you pay for. The staff give top class service, and are extremely welcoming. You can have a fantastic breakfast every morning, freshly prepared. The rooms are fantastically comfortable. The location is quiet and restful, while still close to all the action in P/town. You even have an extremely relaxing spa area with a great hot tub, steam room and sauna to unwind in. I'm sure there are cheaper guesthouses in P/town, but I doubt you will find many, which are quite as good value as Carpe Diem. I look forward to returning next year.
