If you can't join Chef Michael in Italy for one of his Culinary Adventures, then come to Camden and experience some of his favorite Tuscan dishes. We'll begin with a hearty Tuscan Onion Soup with a Pecorino Crust followed by handmade Pici Pasta with a Pork Ragu. Next, we'll stuff Chicken with Prosciutto, Fontina Cheese and Sage and finish things off with an Almond-Ricotta Semifreddo. Join Chef Michael in his Camden, Maine kitchen for a Pasta Favorites Cooking Class. Learn how to make pasta in your own kitchen. Techniques include making the dough, coloring and flavoring different pastas, rolling out and cutting various shapes of pasta, filling pastas such as raviolis and tortellini and cooking pasta. Specific dishes include: Spinach Fettuccine Puttanesca with Shrimp, Farfalle with fresh Tomato, Basil and Roasted Garlic, Green Pea Ravioli with Lemon and Olive Oil and Potato Gnocchi with Lobster and Asparagus. For beginner climbers and those with some experience there is good quality coastal climbing in the area at the beginner and intermediate levels. You will enjoy a gentle hike and receive an introduction to gear, harnesses, ropes and knots. Get experience using equipment and practice a variety of climbs from climbing low angle to steeper ice. The Down with Downhill package offers a romantic, two-night getaway with a gourmet twist. Down with Downhill welcomes with a multi-course breakfasts each morning, afternoon tea and cookies, a five-course feast for two prepared by award-winning chef-owner Michael Salmon, and two one-day lift tickets or snowshoe rentals at nearby Camden Snow Bowl.
