Corgette Egg Roll

Ingredients

  • 1 Egg,
  • 1 cup Grated corgette
  • 1 chopped spring onion
  • shaker dash Salt and Pepper
  • 1/4 cup grated tasty cheese

  1. Stir fry spring onion and corgette, Salt and Pepper in a small pan for about one minute, stiring constantly. Remove pan from heat and set aside.
  2. Heat a non stick flat skillet or coat with oil to very hot.
  3. Beat egg and pour into hot skillet, tip the pan to spread the egg evenly to about the size of a small plate.
  4. Spoon the corgette mix onto one side of the egg mixture, sprinkle with the grated cheese. Roll up the end over and over until you have formed a roll with the corgette and cheese in the middle.
  5. Lift out imediately onto a warm plate and serve with sliced avocado, garnish and Kasumdi. ENJOY!
