3 Boneless skinless chicken breasts or 7 thighs
1/2 cup Butter
7 cloves Garlic diced
1/2 cup Red Onion diced
7 Sliced Jalapeno Peppers with most of the seeds removed
1 tablespoon Hawaiian salt
1 can Diced tomatoes
1 cup Shredded Cheddar Cheese
1 Fresh Avocado
4 cups Steamed White Rice
1 tablespoon Fresh Dill
1 tablespoon Fresh Oregano
Make the rice. Melt butter in a skillet large enough to hold all chicken pieces in one layer.
Saute diced garlic, onion, jalapeno, dill, and oregano until onions are "see through".
Add chicken brown one side, turn and brown the other side, then reduce heat and simmer for 30 minutes or until chicken is tender and thoroughly cooked.
Slice chicken and allow to sit for 15 minutes in skillet.
Serve over hot rice and/or in a tortilla garnished with cheddar cheese, avocado slices, and sour cream.
