Apple Pecan Pancake

Ingredients

  • 2 Eggs
  • 3 tablespoons Butter, melted
  • 1 1/8 cups Milk
  • 1 3/4 cup Flour
  • 2 tablespoons Baking Powder
  • 3/4 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 1 cup Granny Smith Apple, peeled and grated with juice
  • Juice of one fresh lemon
  • 3/4 cup Pecans, chopped and toasted

  1. Toast pecans. Combine flour, sugar, baking powder, salt, and cinnamon in medium mixing bowl.
  2. In separate mixing bowl beat eggs slightly. Add milk, melted butter, lemon juice, and grated apple. Mix well.
  3. Add apple mixture to flour mixture and blend until moistened. Do not overmix. Fold in chopped, toasted pecans.
  4. Use shy of 1/3 C measure per pancake and cook on griddle at 325 degrees.
