Shellmont's Zucchini Bread

Ingredients

  • 3 Eggs
  • 1 cup Canola Oil
  • 1 3/4 cup Sugar ( I use Turbine Sugar)
  • 2 cups Grated Zucchini
  • 1 tablespoon Vanilla
  • 3 cups Flour
  • 1 tablespoon Cinnamon
  • 1 teaspoon Salt
  • 1 teaspoon Baking Soda
  • 1 1/4 teaspoon Baking Powder

  1. Beat Eggs and add Oil, Sugar, and Grated Zucchini. Stir in Vanilla.
  2. Mix all dry ingredients together except nuts.
  3. Add Dry Ingredients to Egg/Oil Mixture. Fold in nuts. Put in 2 pans ( 9 x 3) sprayed with PAM. Bake for one hour at 350. Enjoy!
