BANANA NUT MUFFINS (OR BREAD OR CAKE)

Ingredients

  • 1 1/2 cup Sugar
  • 1/2 cup Shortening
  • 2 Eggs
  • 2 cups Flour
  • 2 teaspoon Baking Soda
  • 1/8 teaspoon Salt
  • 6 tablespoons Buttermilk
  • 3 Mashed Bananas
  • 1 cup Pecans
  • 1 teaspoon Vanilla

  1. Cream sugar & shortening. Add eggs one at a time and beat.
  2. Sift flour, soda & salt. Add dry ingredients alternatively with buttermilk to creamed mixture.
  3. Pour into greased mini-muffin pan, or muffin pan, or loaf pan, or cake pan etc.
  4. Bake at 375F until golden. Time varies by type of pan. Approx 12-15 min for muffins, 18-20 min lg muffins or loaves, 30 min for cake.
