Winter Water Sauté Vegetables Stew

Ingredients

  • 1/2 cup water
  • 1 onion, diced
  • 3-4 cloves garlic, diced
  • 1 bunch thyme
  • 1 red pepper
  • 1/4 cup ginger, diced
  • 5 cups pumpkin (about 2 lbs.) diced medium pieces
  • 3 ears fresh corn, cut in 1/2-inch slices
  • 1 1/2 lb fresh whole okra
  • 1 1/2 teaspoons sea salt to taste
  • 2 tablespoons raw olive oil to taste

  1. Sauté 1/2 cup of water add peppers, onions, garlic and thyme in the water for about 7-11 minutes or until onion gets translucent. Add the pumpkin for 11-16 minutes until soft. Add the corn and okra another 11-16 minutes (the okra should be a bright green after this). cover and simmer for 5-10 minutes or until the okra is tender. When ready to serve, add olive oil. Serves: 6-8
