Bald Mountain Toasted Coconut Pie

Ingredients

  • 4 extra large or jumbo eggs (beaten)
  • 2 1/4 cups sugar
  • 3/4 cup butter (melted)
  • 2 tablespoons lemon juice
  • 2 teaspoons vanilla
  • 2 cups coconut (fresh, unsweetened)
  • 9-inch unbaked extra deep pastry shell
  • Whipped cream for garnish
  • Toasted coconut for garnish

  1. Preheat oven to 350 degrees. In food processor thoroughly combine eggs, sugar, butter, lemon juice and vanilla.
  2. Stir in coconut and pour into pie shell.
  3. Bake for 50-55 minutes or until knife inserted in middle comes out clean and pie is set.
  4. Cool and then chill.
  5. To serve garnish with whipped cream and toasted coconut.
