River Rock Inn Macaroons

Ingredients

  • 14 ounces Sweetened shredded coconut
  • 14 ounces Sweetened condensed milk
  • 1 teaspoon Pure vanilla extract
  • 1/8 teaspoon Pure almond extract
  • 2 Eggs at room temperature

  1. Preheat oven to 325 degrees.
  2. Combine the milk, coconut and vanilla in large bowl. Whip the eggs whites and salt on high speed of a mixer until they make medium firm peaks. Fold the egg whites into the coconut mixture in the bowl.
  3. Using an ice cream scoop drop the batter on to a silpat lined baking sheet. Bake for 25-30 minutes. Cool and serve!
